Had a good day today all things considered. Work was as usual and then my daughter had a performance tonight (she’s on a clogging team) and those are always so much fun! It helped get our minds off the stressful parts of life and back on what really matters – family.

I need to mention something regarding my food choices for this upcoming week. Since it will be a couple of weeks (at least) before my husband either receives his first unemployment check or finds another job, we’ve decided to “pantry shop” this next week. Basically we will not eat out or buy any groceries except for the essentials (bread, eggs, milk). Of course, the problem with this is I hadn’t really stocked our cabinets with a lot of “healthy stuff” yet. I’ve just been going every week and getting what I would need for the week, so I really don’t have a lot of healthy food on hand at this point.
So, unless something changes, here is our dinner menu for the next week:
Saturday 10/31 – Spaghetti and meat sauce
Sunday – Eggs and Pancakes
Monday – Hot Dogs and French Fries
Tuesday – Hamburger Helper
Wednesday – Ramen
Thursday – Italian Sausage and potatoes
Friday – Hamburger Helper
Yeah, not the healthiest of choices, eh? So, I’m gonna have to be real creative this next week to watch my calorie and fat intake. I DO have some ground turkey in the freezer, so for spaghetti tomorrow I will make my sauce with that instead of beef. When we have “breakfast” for dinner on Sunday I will make my eggs without yolks and have sugarfree syrup. Our french fries on Monday will be baked and not fried, etc. etc. The only thing I’m not sure of at this point is how I will get my fruit and veggies for the week. We’re gonna go tomorrow and pick up the few essentials we need like bread and milk, maybe I will look to see if any fruit is on sale or something.
I didn’t walk at all today, so to meet my goal I have to somehow get 6 more miles in between tomorrow and Sunday. Hopefully I do it. It felt really good to meet all my goals last week and I’d like very much to continue that streak.
I also want to give a heartfelt “thank you” to everyone for your well wishes and prayers in light of my husband losing his job. He applied for unemployment today and will start sending his resume out on Monday. We are holding on to the notion that this door closed so another one would open…you know the whole “blessing in disguise” thing and just wait to see what kind of blessing this will turn into. So thank you, your support means the world to me!

Josie, I wish your husband the best in his job search. I know that would be the best thing. It looks like you have a plan in place to keep expenses down over the next few weeks though. Do what you can to stay healthy during this time, and don’t let it get the best of you.

I know that one thing in life that always happens is things pop up when you least expect/want/need them to! It looks like you have a good plan ahead with regards to the menu. Two suggestions might be a good multi-vitamin if you’re not already taking one and then just portion control. This might help you to continue getting nutrients (albeit in a lower-quality way), and losing weight (by focusing on Calories In).

@beej – Those are two really good suggestions. I hadn’t even thought about taking a vitamin! I’ve already been trying to watch my portion control, but will have to be more diligent now. Thanks so much.
Josie, wishing you the best! Do what you can & at least you have a plan in mind. Do they have veggies at the pantry.. even frozen which I use a lot. You can use veggies to help fill you up & get some vitamins. Frozen veggies are flash frozen at time of packing so they have more vitamins in them then veggies shipped in OR that have been sitting for a few days. Can also use the veggies in the hamburger helper!
Either way, looks like you are planning for it & keep your exercise in to help!

Sounds like you have a good plan in mind. I know you will be okay. do keep up with your exercise. That will help greatly and when thing get better and you can eat even healthier, the exercise you’ve keep up with will help to speed up your weight loss.
You are inspiring me to try to watch our spending more and try to incorporate some of the less healthy stuff in our pantry into more healthy meals.

It can be really hard to get five a day on a very limited budget. Like many others, I’ve eaten on the food benefits budget for two weeks as part of a political/social statement. When I did it, maximum benefits for a single person were 18 dollars a week! Big bags of not-wonderful-but-fine apples and oranges tend to be reasonably priced if you’re looking for some fruit choices.
Oh no! I just read that you tore your rotator cuff. Ugh! I’ll certainly add that to my prayer list fo ryou. God’s blessing to you!!!!
Do you have a farmer’s market nearby? You might be able to get some deals there… also frozen fruit and veggies work in a pinch… good luck figuring it all out. And to be honest, a week once in a while that is a little low in veggies won’t hurt you… just follow your plan and watch your intake. The danger is that you might be hungry a lot, because you don’t have the veggies and fruit to fill you up…. have you got some popcorn in your pantry? That will help! Think of it as an adventure!
